Sweet Potato Casserole
3 cups mashed sweet potatoes (approx. 1 1/2 lb. fresh, boiled or baked, skin removed, mashed)1 cup sugar (I use less if potatoes are sweet)
2 eggs, beaten
1/2 cup melted butter
1 tsp. vanilla
1/2 tsp. salt
Topping:
1 cup brown sugar
1/3 cup melted butter
1/3 cup all purpose flour
1 cup chopped pecans
Preheat Oven to 350 degrees. Butter a 13"x9" baking dish.
In a large bowl, mix first 6 ingredients together (potatoes through salt) and pour into prepared dish. In a separate bowl, combine topping ingredients and sprinkle over casserole. Bake 45 minutes.
